One for the BBQ!
Vegetarian Chickpea Burgers
Ingredients:
600g tinned chickpeas
75g dried breadcumbs
2 medium eggs, beaten
4 tablespoons vegetable oil
1 medium onion, chopped
1 tablespoon dried thyme
Salt and pepper for seasoning
Instructions:
1. Add the chickpeas to a blender a handfull at a time and purée to a paste.
2. Blend in the onions, thyme & seasoning, before adding the breadcrumbs and beaten egg.
3. Once evenly blended remove the mixture and form into burger shapes.
4. Heat the oil in a large pan and add fry the chickpea burgers on a medium heat until golden brown on both sides.
